A brief history of the Mighty-O: The Dream
Twenty-four years ago, we moved to Seattle with a mission to create organic donuts with organic plant-based ingredients. Donuts with fresh spices, locally sourced fruits, and unique combinations, unlike anything any donut shop before us was making. Our idea was simple and coincided with the growing organic food movement.
Organic farms certify their ingredients. Organic farmers are held to higher standards of growing food. This also means a reduction of chemicals and fertilizers in the soil that food is grown in. Conventional farming practices use pesticides and fertilizers. These practices negatively impact ecosystems, groundwater, and biodiversity. Chemically grown food can also cause health issues. Organic foods are considered higher in nutrients than conventional food. Organic is better for you and better for the planet!
Working events in Seattle
It was the early 2000s and our peer food purveyors were not making organic vegan products. Mighty-O began street vending by making donuts for the public. It was fun and chaotic baking fresh donuts outside rain or shine. Mighty-O would set up a food booth year-round at a weekly outdoor farmers market called Fremont Sunday Market. In the summers we worked at outdoor events and festivals. We made mini organic donuts and also served locally roasted coffee espresso and homemade lemonade at outdoor events. Some of our most memorable events were Bumbershoot, Folklife, Hempfest, University District Street Fair, Strawberry Festival, Tilth Edible Plant Sale, and more. It was an exciting time and a great way to get to meet our customers.
What we learned
Baking donuts in the beginning sometimes meant that our batches did not turn out perfectly. It was in our Greenlake home that we tested and developed our recipes. We used a mini donut robot machine and made our mixes and glazes from scratch. We would share our donut creations with friends & neighbors alike. Over time our recipes got better by listening. We continue to celebrate the honesty and diversity in our communities in our cafes. We still strive to create delicious and quality experiences and continue to learn from those around us.
